2 pound zucchini, sliced lengthwise
Remove any large seeds and discard
Scoop out the pulp, leaving 1/4" with skin.
Chop pulp and put into skillet with:
1/2 pound sausage - Saute, breaking meat into small
pieces. Drain if needed. Add in:
2 teasp finely chopped onion salt and pepper
1/4 teasp lemon juice 1/4 cup mayonnaise
2/3 cup spaghetti sauce
Mix well and cook for a few minutes until heated thru.
Stuff into zucchini "boats". Top with shredded mozzarella.
Place in a sprayed 9x13 pan. Bake at 350 for 40 mins.
