3 Tabsp vegetable oil        1 pound mixed fresh mushrooms, sliced

1 clove garlic, minced                       1 Tablsp grated fresh ginger

6 green onions, sliced thin            1 1/2 cups long grain rice, cooked

1/2 teasp salt        1/4 cup soy sauce     1 cup frozen peas, thawed

1 teasp sesame oil               OPTIONAL:    crisp, crumbled bacon

In a nonstick fry pan, heat 2 Tablsp of the oil over medium high heat.  Add

the mushrooms and cook, stirring for 5 mins.  Remove to a plate.  Add the

remaining 1 Tabsp of oil and heat, add garlic, ginger and onions.  Cook

and stir for 1 minute, increase heat to high; add rice, salt, soy sauce, peas

and mushrooms.  Cook, stirring for 2-3 mins.  Remove from heat and stir

in the sesame oil.  Add bacon, too, if desired.
