2 Tablsp vegetable oil 1 onion, diced
2 bell peppers, diced (any color)
1 teasp chili powder S & P
1/2 cup long grain white rice 1 1/4 cup water
14 oz. can black beans, rinsed/drained
Heat oil over medium high heat, add onion and
bell peppers and saute until soft, about 6-7 mins.
Stir in chili powder and season with salt and pepper.
Cook another minute or so. Stir in rice, beans and water.
Bring to a boil, cover and simmer for 15 mins.
Remove from heat, let sit, covered for another 5 mins.
Fluffu up and serve with sour cream and sliced grn onions.
