Asparagus & New Red Potatoes
1 pound new red potatoes
1 pound fresh asparagus
2 green onions, sliced
2 Tablespoons olive oil
Salt and pepper to taste
2 teaspoons lemon juice
1/3 cup grated fresh Parmesan cheese
Place potatoes in lightly salted water, cook over medium high heat And cook until just tender, about 15 minutes. Drain well. Cool for 15 minutes, then cut each one into quarters. Trim the asparagus and then cut it into 1” pieces. Sauté the onions in the hot oil in a large non stick skillet for about 1 minute. Add in the asparagus, the salt and pepper and the lemon juice…sauté for 2-3 minutes or until crisp-tender. Add the potatoes and sauté another few minutes or until heated through. Remove from the heat, sprinkle with cheese.
