1 large onion, cut into 1/4" slices 1 1/4 cups flour
1 teasp baking powder 1 teasp salt 1 egg
1 cup milk 3/4 cup dry bread crumbs
seasoned salt up to 1 quart of oil for frying
Heat oil in a deep fryer to 365 degrees.
Separate the onion slices into rings, set aside. In a small bowl,
stir together the flour, powder and salt. Dip the slices into the
flour mixture until they are all coated.
Whisk the egg and milk into the remaining flour mixture using a fork.
Dip the floured rings into the batter and coat well. Place on a wire
rack to drain the excess batter until it stops dripping. Place a foil
piece under the rack to catch the drips. Spread the crumbs onto a plate
or shallow dish. Place rings one at a time into the crumbs, scoop over
the ring to coat, giving it a hard tap to remove excess. Repeat with the
remaining rings. Deep fry a few at a time for 3 mins or until golden.
Remove to towels to drain. Season with seasoing salt.
