Sweet Potato Salad
3 pounds sweet potatoes, peeled/chunked
½ cup chopped green onions
2” piece fresh ginger, peeled/grated
¼ cup extra virgin olive oil
1 teaspoon grated lime zest
2 Tablsp. fresh lime juice sea salt and fresh ground black pepper
Put sweet potato pieces in a large pot, cover with water and boil for 15 minutes or until cooked through but not too soft. Drain well and put potatoes into a large bowl. Add green onions, set aside. Make dressing by whisking together the oil, ginger, zest
And the juice. Blend well, add in some salt and pepper. Pour the dressing over the potatoes and toss well. Serve warm or at room temperature.
