Zucchini Fritters From: Cathy of Forest
2 medium zucchini, shredded
1 clove of garlic, minced
2 large eggs, beaten
1 teaspoon of salt
Black pepper to taste
1 Tablespoon of lemon zest
3 Tablespoons of fresh basil, chopped
½ cup flour
Grate the zucchini, let sit for 10 minutes, then drain well. Add in the garlic, eggs, salt, pepper, zest and basil. Mix well, Then slowly stir in the flour. Heat a large skillet coated with a Light oil or cooking spray. Drop the zucchini mixture into the pan using a ¼ cup measure. Fry 4-5 minutes, then flip and cook another 4 minutes … this will make about 8-10 fritters.
