1 1/2 cups flour 1/2 cup cornstarch 1 Tablsp baking powder
1/2 teasp salt 1 cup grated raw sweet potato 1/2 cup grated raw zucchini
1/2 cup diced onion 1/2 cup fine diced Swiss cheese 1 clove garlic, diced
2 large eggs 3/4 cup milk 1/4 cup melted butter
1 teasp dijon mustard pinch of cayenne pepper
In a large bowl, combine flour, cornstarch, powder and salt. Stir in potato,
zucchini, onion, cheese and garlic. In another bowl, combine eggs, milk,
butter, mustard and cayenne. Pour into dry ingredients and stir just until
moistened. Spoon into greased or paper lined 9 muffin cups. Bake at 400
for 20 minutes...or until tops spring back when lightly touched.
Serve hot or transfer to wire rack to cool completely.
