two 15 oz cans black beans, rinsed/drained 1/4 cup vegetable broth small onion, diced
one jalapeno pepper, seeded/minced 1 Tablsp olive oil 1 clove of garlic, minced
1/2 teasp salt 4 oz. shredded mexican four cheese blend
Process beans and broth in a food processor until smooth (10-15 seconds)
Saute onion and pepper in hot oil in a large skillet for 4-5 mins or until tender.
Add garlic and saute 1 min. Add black bean puree and salt, stirring well. Cook,
stirring frequently for 3 mins or until heated thru. Stir in cheese until melted ...
serve immediately. Use as a side dish or serve with chips as a dip!
