Penne Pasta with Spinach and Feta
1 pound penne pasta 1 medium onion, diced 2 Tablsp olive oil
1 clove garlic, minced 2 cups spinach, washed ¼ cup water
2 ¼ teaspoons lemon juice ¼ teasp fresh ground black pepper
1/3 cup crumbled feta cheese
Cook the penne pasta according to pkg directions, drain well. In a skillet, sauté the onion in the oil until lightly browned. Add the garlic and cook for 2 minutes more. Add the spinach and the water, cover and cook for 3 minutes. When the spinach has wilted, add the pasta and toss to heat through. Add the lemon juice and pepper and toss well. Top with the feta and serve.
