Cheddar Corn Fritters
¾ cup all purpose flour 2 teaspoons sugar 1-2 teaspoons chili powder
Salt and pepper 2 cups whole kernel corn 3 Tablespoons diced bell pepper
2 large eggs, beaten ½ cup water ½ cup grated cheddar cheese
2 Tablespoons melted butter
Combine the flour, sugar, chili powder, salt and pepper. Set aside.
Combine the corn, bell pepper, eggs, water and cheese. Mix well then add into the flour
mixture and stir until batter is evenly moistened. Add in the butter and blend well. Pour ¼”
of oil into a large skillet and heat over medium heat. Drop large spoonfuls of batter into the
hot oil and fry until golden brown and crisp, about 2 minutes. Turn and fry for another two
minutes until browned. Drain on absorbent towels and season with additional salt. Keep warm
in a 200 degree oven until all the fritters are done. Serve at once.
