2 Tablsp olive oil 1/4 cup sliced onions 1 clove of garlic, minced
4 cups leafy greens - spinach, swiss chard or kale
1/4 teasp salt 1/4 teasp lemon zest 1 cup cooked rice (any variety)
In a skillet, heat oil over medium high heat. Add onion and cook,
stirring occasionally until tender, about 5 mins. Add garlic and cook
for another minute. Stir in the greens and cook until wilted. Sprinkle
with the salt and zest. Cool slightly, serve over rice.
Transfer to a blender and puree on high speed until smooth....
stir in rice and mix well to serve to baby 8 months old.
