We had an inquiry about horseradish today, and Bernita was kind enough to
call and give us some terrific info!
You can dig horseradish in any month that has a "R" in it!
When you go to grind it....it is best to do it outside, as the fumes can be
really nasty. She suggests this if possible. If you cry when cutting
onions, you will REALLY tear up when doing horseradish!
Store in a plastic jar with lid, not a metal lidded jar....it will rust
easily. She uses old peanut butter jars.
Use white vinegar....the apple cider vinegar will discolor it.
It can be frozen, too.
Do not discard horseradish pieces into your compost piles...
where ever these end up, they can root and start to grow!
