Pierogi Casserole
From: Pam of Findlay and her mom Louise of Pennsylvania
9 lasagna noodles, cooked and drained              3 cups mashed potatoes
2 cups shredded cheddar cheese                      ½ cup diced onions
¾ cup butter or margarine
Combine potatoes and cheese and blend well. Sauté onions and butter. In a sprayed 11x7 baking dish, put three noodles, top with half the mashed potatoes mixture. Then put three more noodles, and the remaining potatoes. Top with remaining noodles. Drizzle with sautéed onions. Bake at 350 for 20 minutes.
