1/4 cup unsalted butter, cut into pieces 2 Tablsp garlic, minced
2 1/2 Tablsp fresh ginger, minced 1 cup heavy cream
1/2 teasp salt 1 Tablsp brn sugar 1/2 Tablsp orange zest
2 pounds sweet potatoes, peeled - cut in half, then into 1/2" slices
In a medium heavy saucepan, melt butter over medium heat. Add the
garlic and ginger, saute until fragrant but do not brown. Add the cream and
cook and reduce by 1/3. Add salt, sugar, zest and potatoes. Cover and cook
over low heat stirring occasionally until potatoes are tender, about 25 - 30
mins. Remove from heat, mash by hand. Correct the seasonings & serve.
