6 sweet potatoes, scrubbed - baked until done (400 - 45 mins)
Let cool, then slice lengthwise. Scoop out pulp and place in a bowl, add:
3 granny smith apples, peeled/cored/diced
fine grated zest of one lemon
4 oz. cream cheese, softened
1 Tablsp butter blend well, then put back into potato skins and place
on a parchment paper lined cookie sheet. Make Topping:
1/2 cup butter 1/2 cup pkd brown sugar
Blend well, fold in: 1/2 cup flour
1/4 teasp each: cinnamon, ginger Pinch of nutmeg
Mix well, add in: 1 cup chopped walnuts
Form crumble topping and divide on all potato halves.
Drizzle with a little melted butter. Bake at 350 for about 20 mins.
