Vegetable & Side Dishes

1 spaghetti Squash, halved lengthwise/seeded

2 Tablsp vegetable oil          1 onion, diced

1 clove of garlic - minced        1 1/2 cups chopped tomatoes

3/4 cup crumbled feta cheese       3 Tablsp sliced black olives

2 Tablsp chopped fresh basil

Preheat oven to 350, lightly greased a baking sheet.   Place squash

cut sides down on the prepared sheet.  Bake for 30 minutes in the

preheated oven, or until a sharp knife can be inserted with little resistance.

Remove from oven and cool until it can be handled.

Heat oil in a skillet, saute onion until tender, add garlic and cook a few

minutes more.  Stir in the tomatoes and heat thru.

Using a large spoon, scoop squash pulp into a large bowl, toss with

vegetables cheese olives and basil.  Serve warm.
