Wash, peel and rinse potatoes.....make sure all potatoes are of

the same size....either whole small ones or cut up pieces.  Place in a

kettle of water to just covered.  Boil for ten minutes.  Drain.  Pack hot

potatoes into hot sterilized jars.  Leave 1" headspace in jars.  Add in:

1/2 teasp salt for pint jars

1 teasp salt for quart jars

Add fresh boiling water to each jar, leave 1" headspace.

Use a knife to release any air bubbles.  Put on caps.  Process in a

pressure canner at 10 pounds pressure:

pints:  35 mins       quarts:  40 mins
