1 large head of cauliflower, cut into florets 2 Tablsp butter 2 Tablsp flour
1 1/3 cups milk 1/2 teasp dry mustard 1/8 teasp ground nutmeg
8 oz. sharp cheddar, shredded black pepper 1 cup fresh bread crumbs
Cook cauliflower in a large pot of boiling, salted water until just tender, about 10 mins.
Drain well, put into a buttered or sprayed shallow baking pan. Melt 2 Tablsp butter in a saucepan,
add flour and stir to form a paste, cook for 2-3 mins. Gradually add in the milk, whisking constantly.
Stir in the mustard and the nutmeg. cook until thickened, about 5 mins. Reduce heat to low, add
in the cheese, a handful at a time, stirring until melted and combined after each addition. Remove
from the heat....season to taste, pour over the cauliflower. Top with crumbs. Bake at 450 for
15-20 mins. Should be golden and bubbly.
