1 1/2 Tablsp olive oil 1 medium onion, finely chopped 1 carrot, peeled/chopped
2 ribs of celery, finely chopped 1 green bell pepper, chopped 1 clove of garlic, minced
2 Tablsp parsley, chopped 3 Tablsp matzo meal two 16 oz. cans peeled, diced tomatoes
1 Tablsp mushroom powder 1 teasp paprika 1 cup water salt and pepper to taste
Heat oil in a large skillet, cook onion, carrot, celery, bell pepper, garlic and parsley until soft, but
not browned, about 4 mins. Stir in the meal and cook for another minute. Drain tomatoes, reserving
the liquid. Add in the tomatoes, the mushroom powder, paprika and water into the vegetable mix.
Bring to a boil, reduce heat and simme until thick, about 10 mins. Season and serve.
