2 cups pickling salt 4 quarts water 4 qts. thin sliced pickles
1 Tablsp powdered alum 1 Tabsp grd ginger 2 cups white vinegar
2 cups water 6 cups sugar 1 stick cinnamon
1 teasp whole cloves 1 teasp celery seed 1/2 whole allspice
Dissolve salt in 4 qt water, add pickles and let sit for 8 days. On 9th day,
drain well and add fresh, unsalted water to cover. Add alum and simmer
for 30 mins. Drain well, add fresh water to cover and add the ginger. Simmer
for 30 mins. Drain well, Combine vinegar, water, sugar and spices...add to
the pickles and simmer until pickles are clear. Pack into hot jars and seal...
process in hot water bath for 10 mins. Makes 6 pints.
