Large onion - sliced 3/4" thick - separate rings starting at the core.

Batter:  consists of self rising flour and 2 eggs, blend well to the

consistency of thick pancake batter.....place in a large bowl.

3-4 sleeves of saltines, crushed to medium-fine cracker meal....place in

a large bowl.

Place waxed paper on cookie sheets. (as needed)

Dip rings in flour mixture, let the excess drip off.  Drop the coated rings into

the cracker meal and lightly toss to thoroughly coat.  Place on paper lined

cookie sheets.  When all are done, chill for 2-4 hours.

To cook (Fry):   Heat oil to 350 degrees.  Fry in the oil 2-3 mins on each side, do not

overfry or burn - don't overcrowd.   Enjoy!
